Ingredients

Instructions
Prepare the cured egg yolk: place soy sauce in a dish and separate the yolks from the whites.
Dica: To help separate the yolk, use a method that keeps the yolk intact.
Cover the yolks with plastic wrap and refrigerate for 2 to 3 hours to cure.
Season the beef (eye of round), without removing any membranes, with salt and black pepper.
Dica: Let the beef rest after seasoning.
Quickly sear all sides of the beef over high heat to brown, keeping the interior rare.
Place the seared beef in a vacuum-seal bag.
Cook the beef via water bath (sous-vide) at 124°F (51°C) for 1 hour and a half.
Dica: If using an electric cooker, cook for 40 to 50 minutes using the same method.
Prepare the express ponzu sauce using the necessary ingredients.
Dica: Avoid using pre-made sauce, as the quick homemade version is faster than those that need two weeks to mature.
Slice the cooked roast beef into very thin slices.
Dica: Try to slice it as thinly as possible.
Assemble the Roast Beef Don by starting with a base of Gohan (Japanese rice) in the bowl.

Arrange the roast beef slices over the rice.
Drizzle with the prepared ponzu sauce, add the cured egg yolk, daikon radish sprouts, and a small amount of wasabi.
Dica: A final suggestion is to top it with sweet and sour pickled onions.
