Ingredients
- 3cups de All-purpose flour (without leavening)
- 7,5g de Dry active yeast
- 1/2level tablespoon de Salt
- 1,75cups de Water
Instructions
In a bowl, mix the all-purpose flour, dry active yeast, and salt.
Make a well in the center of the dry ingredients and add the water (1 and 3/4 cups).
Mix the dough only until all ingredients are incorporated, stirring for about one minute. No kneading is required.
Dica: The dough will reach a homogeneous mixture consistency, but it doesn't need to be worked.
Cover the bowl with a kitchen towel or plastic wrap and let the dough rise at room temperature for 1 hour and a half, or until doubled in volume.
Dica: If the weather is warm, the rising time can be reduced to about one hour.
Dust your countertop with all-purpose flour and turn out the risen dough.
Dica: Use plenty of flour because the dough is very sticky.
Dust a little flour over the dough and begin folding it: bring the bottom edge up, fold the sides toward the center, and roll the top edge down to form a cylinder.
Flour the countertop again, place the dough down, and gently press it, turning to shape and seal it into a round ball.
Dica: If your hands get sticky, add more flour to the countertop.
Grease a baking pan (approximately 10 inches in diameter) with flour and place the shaped loaf in the center.
Dica: Use a pizza pan if that is what you have available.
Let the loaf rise again, covered, for another 30 minutes while preheating the oven to 482°F (250°C).
Dica: The oven rack should be positioned in the middle position.
With the loaf ready for the oven, use a knife to make a superficial cut (about the width of five fingers) across the middle of the dough.
Dica: Just run the knife across once to create the visual effect on top.
Place the loaf in the preheated oven and bake for 40 minutes. At the 30-minute mark, turn the loaf in the oven to brown evenly.
Dica: Turn the loaf halfway through the baking time to ensure uniform browning.
Remove the bread from the oven and let it cool completely for at least an hour and a half before slicing and serving.
Dica: The characteristic sound as it cools indicates a crispy crust.
