Mix the sugar and water in a saucepan and cook over medium heat until a caramel forms

Dica: Do not stir the caramel once cooking begins

Pour the caramel into a flan mold and set aside

Whisk together the sweetened condensed milk, eggs, heavy cream, egg yolks, and vanilla extract in a bowl

Dica: Strain the egg yolks through a sieve to avoid lumps

Pour the mixture into the prepared flan mold and cover with aluminum foil

Bake the flan in a water bath (bain-marie) in a preheated oven at 320°F (160°C) for about 1 hour and a half
