Ingredients
- Lactose-free skim milk
- Plain yogurt (just milk and culture)
- Skim milk powder
Instructions
Heat the skim milk in a saucepan until the first small bubbles start forming along the edges. Turn off the heat.

While the milk heats, mix the plain yogurt with the skim milk powder in a separate bowl. Let this mixture reach room temperature.
Dica: The yogurt and powder mixture should be at room temperature before adding it to the milk.
If a film or skin forms on the surface of the heated milk, skim it off.
Check the milk temperature. The ideal range for inoculation is between 42°C and 45°C. If you don't have a thermometer, insert a cleaned finger; you should be able to hold it in for 10 seconds without feeling like it's burning.
Dica: The finger test works if the liquid is warm, but comfortable.
Add the yogurt and milk powder mixture to the warm milk and mix well.
Wrap the pot completely with a towel and place it inside the turned-off oven to incubate.

Let the yogurt incubate for 8 to 12 hours, or until the next day, without opening the oven.

Divide the yogurt into jars, filling them only halfway, with the intention of later adding toppings like granola and fruit.
