Instructions
Mash one ripe banana using a fork until you have a puree consistency in a bowl.
Dica: The riper the banana, the sweeter the pancake will be.
Add one egg to the banana puree and mix well.
Add the fine rolled oats (or oat flour), a pinch of cinnamon, and the baking powder to the mixture.
Fold in a little chopped semi-sweet dark chocolate into the batter, if desired, and mix again.
Dica: Chocolate is optional for an extra touch.
Grease a skillet with a little non-stick cooking spray and turn the heat to low.
Dica: Low heat is ideal so the pancake does not burn.
Line the bottom of the skillet with slices of another banana.
Pour the pancake batter over the banana slices in the skillet.
Cover the skillet and let it cook on very low heat until the bottom side is golden brown.
Flip the pancake using a plate to brown the other side.
Dica: Flipping onto a plate makes handling easier.
Remove from heat and serve the finished pancake.
