Easy and inexpensive recipe to prepare homemade pickled radish and cucumber using a simple brine.
Recipe Video
Ingredients
- Radishes
- Cucumbers
- 1tablespoon de Salt
- Water
- Sugar
- Vinegar
Instructions
Slice the radishes and cucumbers into very thin and uniform rounds, using a mandoline or similar tool.
Dica: Uniform thickness is important for proper pickling.
Sprinkle one tablespoon of salt over the sliced vegetables and cover with water. Let them sit for 10 minutes so the salt draws out some of the liquid.
Dica: This process helps with the texture of the vegetables, making them more pliable.
Rinse the vegetables thoroughly by running them under cool tap water three to four times to completely remove the salt.
Pack the drained vegetables into previously sterilized jars, filling them as tightly as possible to reduce the amount of brine needed.
Dica: The fuller the jar, the less brine will be required.
In a saucepan, mix the salt, sugar, and vinegar with water. Heat over the stove until the sugar and salt are completely dissolved. It is not necessary to bring it to a boil.
Dica: The base recipe did not include additional seasonings like garlic, onion, bay leaf, or pepper, but they can be incorporated at this stage.
Pour the brine mixture over the vegetables in the jars. Let the brine cool slightly before sealing the containers tightly. Store in the refrigerator.
Dica: The pickles should be stored for at least 72 hours for the best results.
