Instructions
Ask your butcher to source the beef fat (the unit cost is low, and it might even be obtained for free in some places).
Dica: Try to get the fat for free, as some butchers offer it.
Remove and discard any remnants of meat attached to the fat.
Chop the remaining fat (the meatless parts) and place it in a pot to melt slowly over low heat.
Dica: The melting process should be gradual to extract the pure oil.
Strain the melted oil (the 'liquid gold') into a clean jar.
Dica: Do not discard the solid material left after straining, as it can be eaten like crispy beef cracklings.
Wait for the oil to cool until it slightly solidifies, making it ready for culinary use (beef tallow).
Dica: It can be used in rice, beans, toasted cassava flour, or for grilling meats.
