A snack for a soccer club dinner

Ingredients
- 1,5kg de Top Sirloin Cap (Picanha cut, if available, otherwise strip steak)
- 2tablespoons de Butter
- 1sprigs de Rosemary
- 2cloves de Garlic
- Salt
- Pepper
- 4units de Potatoes
- 600g de Heavy Cream
- 2tablespoons de Dijon Mustard
- 1spoon de Salt (for seasoning)
- 1spoon de Lemon Pepper
- 1spoon de Garlic Powder
- 1spoon de Cornstarch
Instructions
Cut the potatoes into thin sticks (fries/batonnets)
Boil the potatoes in water for 10 minutes
Dry the potatoes and set aside
Mix the dry seasoning ingredients for the potatoes
Toss the seasoning over all the potatoes
Place the potatoes in the air fryer to bake at 200°C for 20 minutes
Cut the sirloin cap into steaks about two fingers thick
Sear the steaks on both sides in a pan with salt and pepper
Add the butter, garlic cloves, and rosemary sprig
Baste the steak with the melted butter until it reaches your desired doneness
Remove the steaks and make the sauce: combine the heavy cream and mustard, seasoning with salt and pepper
Mix well and finish by placing the steaks over the sauce and arranging the potatoes around them
