A delicious farofa served inside a pineapple, made with bacon, smoked sausage, raisins, and other ingredients.

Ingredients
- 1unit de Pineapple
- 3drizzles de Olive oilSubstitui por: óleo
- 150grams de Bacon
- 200grams de Smoked Calabresa sausage
- 1unit de Onion
- 1tablespoon de Garlic
- 1unit de Carrot
- 1/2cup de Raisins
- Salt
- Crushed red pepper flakes
- 2tablespoons de ButterSubstitui por: margarina
- 3cups de Cassava flour (Farofa)
- 2tablespoons de Parsley
Instructions
Cut the pineapple in half and scoop out the flesh.
Cook the bacon in a skillet until crisp.
Add the smoked calabresa sausage and cook until well browned.
Add the onion, garlic, and carrot, and cook until softened.
Add the raisins and cook for a few minutes.
Add the pineapple chunks and cook for a few minutes.
Add the cassava flour and toast until fully incorporated.
Add the butter and cook until melted.
Stir in the parsley and season with salt and crushed red pepper flakes.
Refill the hollowed-out pineapple shell with the farofa and serve.
