Traditional stuffed beef roulade recipe, ideal for family gatherings, prepared in the pressure cooker to ensure tenderness.

Ingredients
- 1kg de Beef (Top Round / Eye of Round)
- 4cloves de Garlic
- Pepper opcional
- Vinegar
- 1piece de Bacon
- 1unit de Carrot
- 1unit de Onion
- Olive/Pickled Olives opcional
- Butcher's Twine/Kitchen String
- 3tablespoons de Oil
- Water
Instructions
Trim any excess fat from the round steak.
Season the meat by mashing four cloves of garlic, adding a little pepper and vinegar.
Stuff the beef with slices of bacon, carrot, and onion. Add olives if desired.
Dica: The filling is up to consumer preference.
Roll the meat tightly and tie it securely with kitchen twine (the twine must be removed before serving).
Dica: Use butcher's twine instead of toothpicks for easier removal later.
Heat about three tablespoons of oil in the pressure cooker.
Sear the beef roulades over medium heat (starting the cooking process) until nicely browned, turning them as they brown.
Dica: The initial searing helps develop color on the beef.
While searing, add small amounts of water to the pot, turning the beef until the added water evaporates and the meat is deeply browned.
Dica: Water should be added gradually during the searing process.
After searing, add a little more water and close the pressure cooker to cook for approximately 15 to 20 minutes.
Dica: The pressure cooking time is shorter because the meat has already been seared.
If necessary, remove the lid and let the sauce reduce slightly until it reaches the desired consistency after cooking.
Dica: The amount of remaining sauce is optional, based on preference.
Remove the kitchen twine from the beef rolls before serving.
Dica: The twine comes off easily after cooking.
