Ingredients
- 400g de Roasted, shelled peanuts
- 1cup de Sugar
- 1heaping tablespoon de Cocoa powder (50% cacao)
- 1cup de Chocolate drink mix (like Nesquik)
- Coffee (liquid)
- Sugar (for rolling)
Instructions
Roast the shelled peanuts. If necessary, sift the roasted peanuts to remove remnants of skin and fine dust.
Dica: To remove the skins, you can blow them off over a large baking sheet.
Grind the roasted peanuts in a blender until a coarse meal forms, reserving about 50 to 60 slightly coarser pieces to give the final candy texture.
Dica: Sifting the ground peanuts from the blender ensures a more uniform texture before incorporating the other ingredients.
In a bowl, mix the ground peanuts (without the reserved coarser pieces), the sugar, the 50% cacao cocoa powder, and the chocolate drink mix.
Dica: The recommended sugar ratio is one cup, and you can use chocolate drink mix to complement the mixture.
Add the liquid coffee gradually, mixing the dough until it reaches the ideal consistency, which should be slightly soft, as it will firm up in the refrigerator.
Dica: The dough should not be too soft. If it firms up too much, you can add a little more coffee after it cools.
Mix the reserved peanut pieces into the dough to incorporate texture.
Shape the dough into small balls (suggested weight is 17g per piece) and then roll them in the extra sugar, giving them the final cashew-like shape ('cajuzinho').
Dica: You can roll all the candies first before coating them in sugar, if you prefer batch production.
Refrigerate the peanut candies (cajuzinhos) until firm before serving.
Dica: Since this recipe does not contain milk or sweetened condensed milk, it keeps well for up to one week.
