Super simple passion fruit icebox cake recipe, made quickly in the blender, ideal for a Christmas dessert.

Ingredients
- 1package de Ladyfingers
- 2carton de Heavy cream
- 2unit de Passion fruit pulp (with seeds)Substitui por: suco concentrado de maracujá (1 xícara)
- 1cup de Powdered milk
- 2can de Sweetened condensed milk
- 1unit de Passion fruit juice (for glaze)
- 3tablespoon de Granulated sugar
- White sprinkles opcional
Instructions
In the blender, add the passion fruit pulp (with seeds), the sweetened condensed milk, the powdered milk, and the heavy cream.
Dica: Use concentrated juice (about one cup) if you opt not to use the pulp with seeds.
Blend all the cream ingredients well until a smooth and firm mixture is obtained, with no need for stovetop cooking.
Dica: The cream should already come out with good consistency.
Begin assembling the icebox cake in a baking dish, creating a layer with the passion fruit cream.
Cover the layer of cream with ladyfingers, without moistening them.
Dica: The cream is moist enough to soften the cookies.
Alternate with another layer of cream and finish with another layer of ladyfingers.
Use the remaining passion fruit cream to cover the last layer of cookies, completing the assembly.
Refrigerate the assembled icebox cake to firm up for a minimum period (ideally overnight).
Dica: Refrigeration makes the ladyfingers soft, with a cake-like texture.
For the glaze, heat the juice of one large passion fruit with three tablespoons of sugar over medium-high heat.
Let the mixture boil and reduce until a slightly reduced glaze consistency is achieved, which will thicken more as it cools.
Dica: High heat helps reduce and enhance the color of the passion fruit.
Remove the glaze from the heat and let it cool slightly before proceeding.
Unmold or serve the chilled icebox cake, generously topping it with the passion fruit glaze.
Decorate the icebox cake with white sprinkles for an added visual touch and flavor.
Dica: You can use black or milk chocolate sprinkles if preferred.
