Instructions
Prepare the seasoning glaze by mixing the mustard, honey, a drizzle of olive oil, black pepper, and the juice from half a lime in a container until a smooth sauce is formed.
Dica: Make sure to mix the glaze ingredients well to achieve a uniform mixture.
Using a knife, make shallow cuts across the entire surface of the ham, creating a crosshatch pattern.
Dica: It is advisable to insert the whole cloves into the ham before applying the glaze to prevent accidents or the ham slipping on the work surface.
Apply the seasoning glaze over the ham, ensuring it runs down and covers the entire piece.
Dica: If you inserted cloves, press them into the ham now, distributing them evenly.
Place the ham in the preheated air fryer at 350°F for approximately 30 minutes total.
Dica: Halfway through (after 15 minutes), remove the piece, add a little water to the bottom of the air fryer basket to prevent the drippings from burning, and use this caramelized sauce to baste the ham before returning it to the appliance.
While the ham finishes cooking, prepare the serving sauce: dissolve the cornstarch in a portion of the orange juice and mix it with the remaining juice and mustard.
Dica: Dissolving the cornstarch in cold liquid prevents lumps from forming.
Transfer the orange juice mixture to a saucepan and cook over low heat, stirring constantly, for about 5 minutes, until it thickens.
Dica: Stirring continuously ensures the sauce reaches the desired consistency without burning on the bottom.
Finish the orange sauce by incorporating a tablespoon of butter until melted, which will add shine and flavor to the sauce.
Dica: Adding the butter off the heat or over very low heat helps emulsify the sauce.
Slice the cooked ham and serve it topped with the orange sauce.
