Instructions
For the boiled preparation, place the cod loins (even frozen ones) in boiling water and cook for 10 minutes. This method is ideal for quick meals and can be served with rice, toasted cassava flour, and vegetables.
Dica: The loins come already desalted and ready to cook, meaning they can go straight from the freezer to the stovetop.
For the oven preparation, thaw the loins beforehand by leaving them in the refrigerator overnight. Grease a baking dish with olive oil, ensuring the bottom is well covered to prevent the fish from sticking.
Dica: For a complete meal, use the same dish to add potatoes, broccoli, onion, and cherry tomatoes.
Bake the cod in a preheated oven at 350ºF (180ºC) for approximately 20 minutes.
Dica: In the oven, preparation is straightforward and can result in a complete meal, dirtying only one baking dish.
For the Air Fryer preparation, use the thawed loin. Cover the basket with aluminum foil (with a little olive oil on the bottom) to make cleanup easier.
Dica: There is no need to preheat the Air Fryer for this recipe.
Cook in the Air Fryer basket for 12 minutes, flipping halfway through. When flipping, drizzle an extra bit of olive oil over the loin to prevent it from drying out.
Dica: Cooking in the Air Fryer is faster than in a conventional oven.
For the barbecue version, coat the loins generously with olive oil to prevent them from sticking to the grate, and sprinkle with coarse salt or grilling salt (no need to add more salt after desalting).
Dica: If the grate is not non-stick, use an appropriate fish grilling basket.
Place the cod over very hot coals, grilling for a few minutes on each side until it achieves a nice barbecue char.
Dica: It is normal for the cod to stick significantly to a traditional grate.
