Ingredients
- 3cup de sweet tapioca starch
- 2cup de sour tapioca starch
- 1cup de sugar
- 2teaspoon de salt
- 1,5cup de cooked and mashed purple sweet potato
- 1,5cup de purple liquid (sweet potato cooking water)
- 1,5cup de oil (soybean or standard oil)Substitui por: azeite

Instructions
Cook the purple sweet potato in a pressure cooker for 5 minutes until soft.
Dica: Use the sweet potato cooking water to maintain the purple color in the dough.
In a bowl, mix all the dry ingredients: sweet tapioca starch, sour tapioca starch, sugar, and salt.
Dica: Mix the dry ingredients well before adding the liquids.
Add the mashed purple sweet potato and oil to the dry mixture, beginning to incorporate with a utensil or your hands (using a fork or similar) until a crumbly texture forms.
Dica: The initial texture should resemble coarse crumbs (like farofa) before adding the liquids.
Gradually add the purple liquid (cooking water) to the dough, mixing until all ingredients are incorporated and you can form small balls that don't easily flatten.
Dica: The dough is ready when you can form a firm ball; if it's too soft, add more sweet or sour tapioca starch.
Shape the dough into balls of the desired size. If filling, insert a piece of vegan cheese into the center of each ball, completely covering it with dough.
Dica: To ensure the cheese is fully covered, place it in the middle and then roll the dough around it, or place cheese on the outer surface of the ball as well.
Preheat the oven to 400°F (200°C).

Arrange the balls on a baking sheet, leaving space between them, and bake in the preheated oven for approximately 30 minutes.
