- 1piece de Chicken breast
- 1tiny amount de Liquid smoke
- 1to taste de Barbecue grill seasoning (or BBQ rub)
- 1tiny amount de Olive oil
- 2pieces de Hard-boiled egg
- 1piece de Cooked potato (well-seasoned)
- 1to taste de Celery
- 1tiny amount de Oregano
- 300grams de Mayonnaise
- to taste de Ready-made pastry shells (for canapés)
Instructions
Clean the chicken breast, removing any fat, and make superficial cuts on both sides without cutting all the way through the meat.
Season the chicken generously with liquid smoke and barbecue grill seasoning. Drizzle with a little olive oil.
Dica: Let the chicken marinate in the liquid smoke for at least 5 minutes, or up to 30 minutes in the refrigerator for a more intense flavor.
Grill the chicken portions under a broiler preheated to approximately 500°F (250°C) until well-seared and golden brown on both sides.
Dica: Grilling quickly helps intensify the smoky flavor. The chicken can be refrigerated for 12 hours after searing to enhance the smoky aroma.
Chop or shred the grilled chicken into small pieces, using a food processor if you desire a finer texture.
Dica: Chop or use a food processor or blender to shred the chicken if preferred.
Chop the hard-boiled eggs (cooked for 10 minutes and cooled) and add them to a bowl.
Dica: Keep all filling ingredients chilled, as mayonnaise will be added shortly after.
Dice the cooked and seasoned potato into very small cubes and incorporate it into the bowl with the egg.
Dica: The small diced potato adds a wonderful burst of flavor with every bite.
Finely chop the celery and mix it with the rest of the ingredients in the bowl.
Dica: The finer the chop of the celery, the better the final texture of the filling.
Add oregano to taste and approximately 300 grams of mayonnaise, mixing all ingredients until a smooth and creamy spread is obtained.
Dica: The amount of mayonnaise should be enough to bind all components and provide creaminess.
Fill the ready-made pastry shells using a spoon, placing a generous amount of the spread into the cavity of each one.
Dica: The pastry shells can be purchased ready-made at the grocery store; they are made from a dough similar to pie crust dough.
Serve the stuffed canapés, enjoying the crunchiness of the pastry combined with the smoky filling.
Dica: This cold appetizer is usually a hit at year-end celebrations.
