Instructions
Using a knife, cut and remove the casing (outer membrane) from each sausage.
Dica: The casing should come off in one piece, leaving only the sausage meat exposed.
Heat a skillet over medium-low heat, then add the spoonful of butter/margarine and a little olive oil (or cooking oil).
Dica: Olive oil is preferable, but vegetable oil can be substituted.
Increase the heat and add the sausage meat to the skillet. Cook thoroughly, breaking it up as if it were ground meat, until it is deeply browned and dry, with the fat rendered out.
Dica: The ideal texture is very toasted and dry, utilizing the flavorful fat released.
With the sausage cooked, lower the heat to medium-low and add the ready-made farofa, mixing well so that all pieces brown with the meat fat.
Dica: If the farofa seems dry at this point, don't worry, as the tomato will add moisture.
Incorporate the chopped tomatoes and candied fruit into the farofa and sausage mixture.
Season with a pinch of salt (SPG) to adjust the flavor, considering that the tomato was not seasoned.
Dica: Remember that this seasoning is only for the farofa; more seasoning will be added in the next recipe that uses this farofa.
Turn off the heat and stir quickly to distribute the final seasoning before serving the ready-made farofa.
