A practical and delicious recipe for holiday farofa, enriched with bacon, turkey breast, and dried fruits.

Ingredients
- 1/4cup de butter
- 1/2cup de diced smoked bacon

- 2cups de yellow cornmeal
- 1cup de grated carrot

- 3tablespoons de chopped fresh chives
- 1teaspoon de salt

Instructions
In a skillet, add 1/4 cup of butter and 1/2 cup of diced smoked bacon. Heat over medium and sauté the bacon until lightly browned.
Add 1 cup of diced turkey breast, 1/2 cup of chopped onion, and 1 lightly minced tablespoon of garlic to the sauté. Cook well until the garlic is golden.
Dica: You can substitute the turkey breast with ham, if preferred.
Add 1/2 cup of chopped green olives and an additional 1/4 cup of butter to the mixture.
Pour in the 2 cups of yellow cornmeal. Let the butter melt in the center of the pan, then mix until completely incorporated into the cornmeal, resulting in a homogeneous texture.
Incorporate the colorful ingredients: 1 cup of grated carrot, optional diced dried apricots, 1/2 cup of chopped walnuts, and 1/2 cup of raisins (black or golden).
Season with 3 tablespoons of chopped fresh parsley, 3 tablespoons of chopped fresh chives, 1 teaspoon of salt, and half of 1/2 teaspoon of black pepper.
Mix all ingredients well and cook for another 3 minutes to finish the preparation.
Dica: After finishing, remove from heat and do not cover the skillet to prevent the farofa from losing its texture due to trapped moisture.
