A vibrant and flavorful pineapple farofa, perfect as a side dish for holiday meals, especially with pork.

Ingredients
- Butter
- Pineapple
- Spicy Chili (like a Thai chili or serrano)
- Cassava Flour (Toasted)
- zest de Lemon
- Salt
- Mint
Instructions
Melt the butter and grill the pineapple on one side.
Remove the grilled pineapple and set aside.
Sauté the spicy chili in the same pan for approximately two minutes.
Add the cassava flour to the sauté and stir so that it absorbs the flavor and achieves a slightly golden color.
Incorporate the reserved pineapple into the farofa.
Add the lemon zest and salt to season and enhance the flavor with the pineapple.
Finish the farofa by adding the mint leaves, but only at the moment of serving, to prevent them from darkening due to the heat.
Dica: Add the mint only when serving, as heat causes it to oxidize and lose its color.
