Ingredients
- Chicken breast cutlets
- Olive oil
- Butter
- Herbes de Provence (or mixed dried herbs)
- Orange juice
- Salt
- Pepper
Instructions
Drizzle the chicken cutlets with a little olive oil and wrap them in plastic wrap.
Pound the cutlets thin while they are still wrapped in plastic.
Remove the chicken from the plastic wrap and season only one side with salt and pepper.
Heat a large skillet over medium-high heat and melt the butter.
Dica: Use a large skillet to mimic a flat-top griddle (chapa).
Add the herbs to the melted butter.
Place the chicken in the skillet, seasoned side down, to sear.
Dica: Avoid moving the chicken; swirl the pan if necessary during the searing process.
Flip the chicken and pour the orange juice into the sides of the skillet (around the cutlet).
Continue swirling the pan until the orange juice has significantly reduced, forming a sauce.
Remove the chicken cutlet and serve, finishing by spooning the orange sauce over the top.
