Ingredients
- 1cup de Sugar
- 1/2cup de Water
- 2tablespoons de Vinegar
- 6units de Whole Cloves
- 1/2cup de Cold Water
- 1unit de Orange Juice
- 1/2unit de Lemon Juice
- 3units de Cavendish Banana
Instructions
In a cold saucepan (heat off), combine the sugar, water, and vinegar.
Turn on the heat and cook the mixture without stirring until the syrup reaches a color similar to a cola drink (guaraná color).
Dica: Do not stir the syrup while it caramelizes to prevent it from crystallizing.
Once the syrup reaches the desired color, add the six whole cloves.
With the saucepan removed from the heat, slowly add the cold water, drop by drop, to prevent burns or crystallization of the syrup.
Dica: Adding the cold water drop by drop is crucial to prevent the syrup from sugaring up.
Stir in the juice of one orange and the juice of half a lemon into the syrup.
Return the saucepan to medium heat and let it boil again.
Add three Cavendish bananas sliced into rounds and keep on low heat for 3 minutes.
Dica: Cooking on low heat helps keep the banana slices more intact.
Remove from the heat. The topping will be ready to serve hot over ice cream (ideally vanilla or lemon flavor).
Dica: Serve the topping warm over the ice cream.
