Ingredients

Massa
  • Cookies (Maizena type, Biscoff, or Orion)
Substitui por: biscoito maizena, biscoito Orion
  • 3tablespoons de Melted butter or margarine
Recheio
  • 200grams de Cottage cheese ~R$ 13,00
  • 2 de Eggs
  • 1can de Traditional sweetened condensed milk
Cobertura
  • 1/2can de Cooked dulce de leche (or store-bought)
  • 2tablespoons de Heavy cream

Instructions

1
triturar

Crush the cookies into fine crumbs using a rolling pin or blender.

2min

Dica: If there are large chunks left, it will be harder to mold the bottom layer.

2
misturar

Melt the butter (or margarine) in the microwave and mix it into the cookie crumbs, adding a little at a time until you get a moist mixture that holds together when squeezed.

3min

Dica: The dough should be moist enough to hold the shape of the pan when pressed.

3
modelar

Line only the bottom of a 9-inch springform pan with the cookie dough, pressing down with your fingers to create an even base (neither too thin nor too thick).

4min

Dica: The process is similar to molding sand; ensure the base is uniform.

4
assar

Preheat the oven to 350°F (180°C) and bake the cookie base for approximately 10 minutes.

10min
180°C

Dica: The oven must be preheated for at least 10 minutes before placing the pan inside.

5
bater

In the blender, add the cottage cheese (which can be strained beforehand if you don't have a powerful blender), the two eggs, and the sweetened condensed milk, and blend well.

2min

Dica: Straining the cottage cheese is not necessary if using a powerful blender.

6
assar

Pour the blended filling over the pre-baked cookie base and return to the oven until the filling is set and a inserted fork comes out clean (it should look pale/white).

15min
180°C

Dica: Baking time varies; in the recipe, it took about 15 minutes.

7
misturar

While the pie bakes, prepare the topping by thoroughly mixing about two tablespoons of heavy cream into half a can of cooked dulce de leche.

1min 30s

Dica: Do not use a full can of dulce de leche like the presenter suggests; use only half a can to prevent the topping from overflowing.

8
esperar

After removing the pie from the oven, let it rest for about 15 minutes before attempting to remove the ring, to prevent the bottom from breaking. Loosen the edges with a spatula, if necessary, and remove the ring.

15min

Dica: Wait until it cools a little more, if possible, before unmolding.

9
espalhar

Spread the dulce de leche and heavy cream topping evenly over the un-molded pie.

2min
10
polvilhar

Finish the pie by sprinkling the remaining cookie crumbs on top.

1min

Dica: This pie does not need to return to the oven after the topping is added.
