A fun, molecular recipe for creating strawberry gelatin spheres, ideal for adding to drinks like chocolate milk.
Recipe Video
Ingredients
- 24g de Unflavored gelatin
- Chocolate powder (e.g., Nesquik)
- Milk
- Vegetable oil
- 3cups for rinsing de Ice-cold water
Instructions
Prepare the flavored liquid by mixing the chocolate powder with a small amount of milk until a concentrated paste forms.
Dica: Prepare the milk by adding the chocolate until it is very strong.
Hydrate the unflavored gelatin in a bowl by adding a small amount of the previously prepared milk, forming an initial mixture.
Heat the remaining milk until it starts to boil. Then, dissolve the hydrated gelatin in this hot mixture, adding it gradually and stirring well.
Dica: Initially, it might seem like the gelatin won't dissolve, but keep adding it in small amounts and stirring until it is completely incorporated.
Combine the already dissolved gelatin liquid with the concentrated milk and chocolate mixture, stirring everything together.
Cool the resulting mixture at room temperature, outside of the refrigerator, for a minimum of one hour, ensuring it cools completely.
Dica: The mixture must be completely cold before proceeding with the spherification.
Place a tall, thin glass containing vegetable oil in the freezer for at least one hour, ensuring the oil is completely chilled.
Dica: Do not try to rush this process; the oil needs to be very cold for the correct formation of the spheres.
Remove the cold liquid mixture and the chilled oil. Using a dropper or syringe, drop the cold mixture, drop by drop, into the chilled oil inside the tall container.
Dica: Using a tall, thin glass helps conserve oil and ensures the necessary travel distance for the spheres to form.
Collect the formed spheres, discarding any that are deformed or stuck together (clumps).
Dica: Separate the little balls, discarding any that look 'deformed' or 'sperm-like'.
Rinse the gelatin spheres in cold running water, rinsing at least three times to completely remove all oil residue.
Dica: It is essential to rinse well to remove any trace of oil.
