Recipe for ricotta ravioli with homemade tomato sauce, using Galbani brand cheeses

Ingredients
- 600grams de Fresh creamy ricotta cheese
- 150grams de Grated Parmesan cheese
- Lemon
- Grated nutmeg
- Ground black pepper
- Salt
- 300grams de Italian flour
- 3count de Whole eggs
- 3tablespoons de Olive oil
- 2tablespoons de Butter
- 1count de White onion
- 2cloves de Garlic
- 400ml de Tomato passata
- Fresh thyme
- Fresh bay leaf
Instructions

Mix the filling ingredients in a bowl

Prepare the dough by mixing flour, eggs, and salt

Let the dough rest for 30 minutes

Roll out the dough using a pasta machine or rolling pin

Place the filling onto the dough and form the ravioli

Cook the ravioli in boiling water for 2-3 minutes
