An easy and creamy recipe for tilapia fillets with coconut milk sauce, ideal for a special lunch or dinner that everyone will enjoy.

Ingredients
- 800g de tilapia fillets
- 4cloves de garlic
- 1medium de onion
- 3medium de tomato
- cherry tomatoes opcional
- parsley and chives (fresh herbs)
- salt
- black pepper
- 3drizzles de oil or olive oil
- annatto powder (or tomato paste) opcionalSubstitui por: extrato de tomate
- 1,5cup de water
- 1small can/carton de coconut milk
- biquinho peppers opcional
Instructions
Cut the tilapia fillets into medium-sized cubes.
Season the tilapia pieces with a little salt, reserved minced garlic, and black pepper, mixing well.
Dica: Don't overdo the salt, as the sauce will already be well-seasoned.
Finely mince the garlic, the medium onion, and the three medium tomatoes.
Dica: Use a very sharp knife to make cutting the vegetables easier, especially the tomato.
Finely chop parsley and chives (fresh herbs) to use later.
In a heated skillet, add a little oil or olive oil and sauté the garlic until it just begins to soften.
Add the chopped onion and sauté until it softens completely.
Add the chopped tomatoes and season with annatto powder (or tomato paste), salt, and some of the chopped fresh herbs.
Dica: If using annatto powder, it will help give the sauce a reddish tint.
Pour 1.5 cups of room temperature water into the sauce and let it simmer for a bit.
Add the seasoned tilapia cubes to the skillet, cover, and let them cook for about 10 minutes after it starts boiling.
Dica: To check if the fish is cooked, pierce the thickest pieces with a fork; if milky liquid comes out, it's ready.
Stir the small can/carton of coconut milk into the sauce and let it simmer for another half minute.
Optionally, add cherry tomatoes cut into quarters and biquinho peppers for garnish and extra flavor.
Dica: Biquinho peppers add a special flavor, but it is to taste.
Turn off the heat after about a minute of boiling with the coconut milk and finish by garnishing with the remaining chopped fresh herbs.
Dica: The recipe is suggested to be served with rice, salad, and potato sticks.
