In a saucepan, combine the water and one heaping tablespoon of vinegar.
Dica: The vinegar is the secret to keeping the coconut candy from becoming sticky later.
Add the cup of sugar (about 250g) to the mixture in the saucepan.
Stir in the 400g of shredded coconut and place the saucepan over heat.
Dica: You can use sweetened or unsweetened coconut, according to your preference.
Bring the mixture to a boil and wait until all the water has evaporated, stirring patiently.
Dica: It takes patience to let the water dry out completely.
Continue cooking until the mixture starts to turn light brown, indicating caramelization, but avoid letting it get too dark to prevent a burnt taste.
Dica: The ideal point is when it is very light golden brown, but not excessively dark.
Transfer the cooked candy onto a plate, spreading it out well so it can cool evenly.
