- 1/2cup de Water
- 2heaping tablespoons de Vinegar
- 2drops de Red food coloring
- Strawberries
- Sticks
Instructions
Prepare a white brigadeiro with a very firm consistency, similar to a very hard truffle mixture.
Dica: The brigadeiro needs to be much firmer than the traditional version to hold the coating.
Insert a stick into each strawberry.
Coat each strawberry with the firm brigadeiro, molding it as if shaping a small teardrop shape.
Dica: Make sure the brigadeiro completely covers the strawberry.
In a saucepan, mix the sugar, water, and vinegar. Heat over the stove and stir initially.
Add the red food coloring, adding two drops initially, adjusting until you achieve the desired color.
Dica: After adding the coloring, do not stir the syrup again while it boils.
Cook the syrup until it reaches the hard-crack stage (different from standard candied apple syrup), where a drop placed in cold water becomes very hard and makes a glass-like sound when it hits the bottom.
Dica: Test the stage by dripping a little syrup onto your hand to test its firmness.
Turn off the heat and use the hot syrup to coat the stuffed strawberries, dipping them quickly to form a crunchy shell.
Dica: The syrup must be at the correct temperature (hard-crack stage) to ensure crispiness.
