Ingredients

Instructions
Wash the purple sweet potatoes (or white ones, if preferred). Trim off the ends.
Cut the potatoes into uniformly thick pieces (you can cut them in half or into quarters, depending on the initial size) to ensure even roasting.
Dica: Keeping the thickness standardized prevents some pieces from cooking faster than others.
Place the sweet potato pieces in a bowl of water to prevent them from darkening while you prepare the seasoning.
Drain the water from the potatoes and dry off any excess moisture in a clean container (use paper towels if necessary for better seasoning adherence).
Season the potatoes by adding mashed garlic, oregano, salt, black pepper, a good amount of smoked paprika, and drizzle with olive oil to taste.
Dica: Adding the garlic to the potatoes before roasting greatly enhances the flavor.
Toss the potato pieces vigorously with the seasoning until they are all well coated.
