Ingredients
- 3units de Large eggs
- 400g de Dulce de leche (cooked in a can or store-bought)
- 100g de Shredded dried coconut (flaked)
- 50g de Grated Parmesan cheese
- 3tablespoons de All-purpose flour
- 1teaspoon de Baking powder
- Butter (for greasing the pan)
- All-purpose flour (for dusting the pan)
Instructions
In a bowl, mix the three large eggs with the 400g can of dulce de leche until the ingredients are incorporated and form a smooth cream.
Dica: This preparation can be done in a blender or stand mixer, but if using a blender, do not process after adding the coconut to maintain texture.
Fold in the shredded dried coconut (100g), the grated Parmesan cheese (50g), the three tablespoons of all-purpose flour, and the teaspoon of baking powder into the egg and dulce de leche mixture.
Dica: Switch the wire whisk (fouet) for a spatula when adding the dry ingredients.
Mix well with the spatula until the flour and baking powder are incorporated, dissolving the flour, even if the batter isn't perfectly smooth due to the coconut.
Dica: There is no risk of the recipe failing because of the dulce de leche base.
Grease a 21x18 cm (approx. 8.3 x 7.1 inch) pan with butter and dust lightly with all-purpose flour.
Transfer the entire batter to the prepared pan and spread evenly.
Dica: The scent of the batter is already delicious; the caramelized aroma will fill your house during baking.
Place the batter in the preheated oven to bake for approximately 30 to 35 minutes.
Dica: The perfect doneness is when the cake is firm to the touch. If pierced with a toothpick, it should not come out completely clean, as the final texture is creamy and moist, similar to a coconut custard tart ('queijadinha').
Remove the cake from the oven and let it cool before inverting it onto a plate and slicing.
