Garlic and oil pasta recipe with a special touch using Sicilian lemon zest, served with Parmesan cheese and paired with wine.

Ingredients
- Garlic
- Oil
- 180º Pepper (hot pepper)
- Pasta
- Salt
- Parmesan cheese
- Sicilian lemon zest
Instructions
Prepare the infused oil by heating the oil with peeled garlic cloves and the 180º Pepper for 15 minutes at 250ºF (ideally, this should be 1 or 2 hours if time allows).
Dica: The oil used to infuse the garlic can be saved and reused to season other dishes like rice or ground beef.
Cook the pasta in boiling, salted water, following the time indicated on the package.
Dica: Use some of the pasta cooking water to help form the sauce.
Lightly mash two or three garlic cloves to form a paste.
In another pan, heat the infused oil over low heat for 3 to 4 minutes, adding the garlic paste made in the previous step.
Dica: The garlic that was infused in the initial heating process is gold; use it.
Drain the pasta and add it to the pan with the garlic oil. Mix well, adding a little of the cooking water to emulsify and form the sauce. Turn off the heat.
Finish the dish by adding the Sicilian lemon zest and mix gently.
Dica: Sicilian lemon pairs very well with pasta.
Serve the pasta sprinkled with Parmesan cheese.
Dica: Use a ladle to serve and make the plating more attractive, if desired.
