Ingredients
- Udon noodles
- Bacon
- Bacon rind (fat)
- 3 de Egg yolks
- Parmesan cheese
- Pecorino cheese

Instructions
Remove the bacon rind and set it aside for use in other preparations (stocks or beans).
Dica: Bacon rind adds a lot of flavor to other dishes.
Cut the bacon into large cubes and place them in a skillet over medium heat to brown.
Dica: Large cubes ensure the bacon gets crispy on the outside and juicy inside.
Remove the browned bacon from the pan, setting it aside, and also reserve the rendered oil (fat).
Dica: The bacon grease will be used later in the sauce.
In a bowl, place three egg yolks (preferably free-range).
Dica: Free-range egg yolks give the sauce a more vibrant and appealing color.
Add the Parmesan cheese, Pecorino cheese, and one teaspoon of miso paste to the bowl with the yolks.
Dica: Miso paste is the secret ingredient that adds a delicious umami flavor to the carbonara.
Place the yolk and cheese mixture over a double boiler (bain-marie) and begin incorporating the bacon grease gradually, whisking vigorously with a whisk to achieve a silky emulsion.
Dica: Whisking while carefully adding the hot grease helps create a creamy sauce without overcooking the eggs.
Cook the frozen Udon noodles until they thaw and are thoroughly heated through.
Dica: Frozen Udon has a better texture.
Immediately transfer the hot Udon to the bowl with the egg mixture and stir quickly. The temperature of the noodles will cook the eggs and turn the mixture into a creamy sauce.
Dica: It is crucial to stir quickly to emulsify without scrambling the eggs.
Stir in the reserved crispy bacon into the finished mixture.
Serve the Udon Carbonara immediately.
