A holiday side dish with bacon and pineapple, perfect for Christmas dinner.

Ingredients
- 300g de Bacon
- 1link de Calabresa sausage
- 1unit de Pineapple
- 1unit de Onion
- 4cloves de Garlic
- Salt
- 100g de Cassava flour (or toasted cassava flour)
- 100g de Panko breadcrumbs
- 50g de Raisins
- Fresh herbs (parsley/chives)
- 1tablespoon de Butter
Instructions
Add a drizzle of oil to a skillet and cook the bacon until crispy and golden brown.
Remove the bacon from the skillet and set aside.
Add the diced calabresa sausage to the skillet and sauté.
Add the cubed pineapple to the skillet and cook until caramelized.
Add the chopped onion and garlic cloves to the skillet and sauté.
In a bowl, combine the cassava flour and panko breadcrumbs and mix.
Add the reserved bacon, sausage, pineapple, and raisins to the bowl and mix everything well.
Serve the farofa warm.
