Instructions
Wash the strawberries thoroughly and dry them carefully. Reserve the stems (caps), if desired.
Dica: It is crucial that the strawberries are completely dry before filling and dipping.
Prepare or use your pre-made vegan brigadeiro (as referenced in a previous video). Shape portions of the brigadeiro around each strawberry, as if encasing it, forming a small cone or ball shape.
Dica: If the brigadeiro is too soft, chill it for a while to firm up before rolling.
Lightly rub the filled strawberry with oil on your hands to make handling easier, and then coat it thoroughly with powdered coconut milk to ensure a stable structure.
Dica: Be sure to use vegan powdered coconut milk, as some brands may contain casein.
In a saucepan, mix the water, sugar, and red food coloring to taste until the dry ingredients are well dissolved.
Dica: Optionally, add edible gold dust at this stage.
Place the syrup mixture over heat. When it begins to warm up, add the two tablespoons of vinegar and stir briefly just to combine; do not stir again after it starts boiling.
Dica: The vinegar helps the candy coating become extra brittle/crunchy.
Cook the syrup until it reaches approximately 285°F (140°C). Turn off the heat immediately upon reaching this temperature and begin the dipping process right away, as the temperature will start to drop.
Dica: If you don't have a thermometer, monitor the syrup in the hot pan starting around the 285°F mark.
Insert a skewer into the filled strawberry and, tilting the pan slightly, dip the strawberry into the hot syrup, allowing the excess to drip off.
Dica: You can test the syrup stage using a glass of cold water (if it hardens and shatters, it is ready).
Transfer the dipped strawberries to a surface lined with parchment paper so the thin candy shell can dry and harden.
Dica: If you are concerned about the brigadeiro melting during the dipping process, refrigerate the filled strawberries for extra time before caramelizing.
