Ingredients
- 1tablespoon de Vegan Butter/Margarine
- Vegan Sweetened Condensed Milk
- 4tablespoons de Powdered Coconut Milk
- 2cups de Sugar
- 1cup de Water
- 2tablespoons de Vinegar
- 1dash de Red Food Coloring
- 1lid de Edible Gold Dust opcional
- Strawberries
Instructions
In a skillet, melt the vegan butter over low heat, adding the vegan sweetened condensed milk.
Over low heat, add four tablespoons of powdered coconut milk and begin mixing vigorously (the powder should be added cold, if possible, to prevent lumps).
Dica: If mixing the powder with hot liquid, use an immersion blender to dissolve completely and prevent clumping.
Cook the mixture over low heat until it reaches the consistency of brigadeiro—characterized by stirring that parts the center of the pan (Moses effect). Do not overcook, as the coconut milk can become rubbery.
Dica: The filling will look loose, but it will firm up as it cools.
Transfer the white brigadeiro filling to a plate and refrigerate until it reaches a firm, rollable consistency.
Dica: The initial consistency will be soft but will firm up after cooling.
Prepare the strawberries: remove the stems by hand, avoiding cuts that release moisture. If necessary, delicately trim the base with a knife.
Dica: Removing the stem by hand prevents the strawberry from 'crying' (releasing water).
Wash and carefully dry each strawberry with a paper towel to ensure the filling adheres well.
Dica: Complete drying is essential for the filling to stick properly.
If the filling mixture is too soft after chilling, add more powdered coconut milk (about two tablespoons per strawberry) and mix until it forms a firm dough that doesn't stick to your hands.
Dica: The dough should be firm enough to be shaped.
Lightly grease your hands with oil and mold portions of the white filling around each strawberry, covering it completely.
Dica: Using oil prevents the filling from sticking to your hands.
Prepare the coating: place the sugar, water, and vinegar in a saucepan and bring to a boil over high heat, without stirring the mixture to prevent crystallization.
Dica: Do not stir the syrup after it starts boiling, except to incorporate ingredients. If desired, add the gold dust and red coloring now.
Monitor the syrup until it reaches 300°F (hard crack stage).
Dica: The vinegar helps prevent the candy coating from hardening too much.
Skewer each filled strawberry onto a bamboo stick and quickly dip it into the hot syrup, letting the excess drip off.
Dica: A candy thermometer is recommended for accurately checking the syrup's hardness stage.
Remove the excess syrup and place the coated strawberry on a paper towel to dry and set the coating.
Dica: Carefully remove the skewer once the syrup coating begins to harden.
