A twist on the classic Brazilian grilled cheese, incorporating the spicy and fermented flavor of Korean kimchi.

Ingredients
- to taste de Kimchi
- to taste de Mozzarella cheese
- to taste de Gouda cheese
- to taste de Butter
- 2thick slices de Chocopan style bread
- to taste de Mayonnaise
Instructions
Finely chop the kimchi.
Melt a little butter in a skillet and sauté the chopped kimchi until it is very dry, then set aside.
Brush mayonnaise on both sides of the two slices of bread.
Sear the bread slices, mayonnaise-side down, in a skillet, browning both sides.
In another skillet (or the same one, if preferred), add a little water, the mozzarella cheese, and the Gouda cheese, and heat until the cheeses melt and blend well.
Dica: Keep stirring to homogenize the mixture, even if it seems like it's going to separate at first.
Assemble the sandwich by placing one slice of bread, adding the sautéed kimchi, the melted cheese mixture, and finally, the other slice of bread.
