Add the baking powder to the batter and gently fold it in until you achieve a smooth consistency.
Heat a non-stick skillet (ideally 6 to 7 inches in diameter/15 to 18 cm). Pour almost all of the batter into the skillet.
Dica: Use a smaller skillet for a taller cheese bread.
Place a little more cheese (mozzarella or your preference) in the center of the raw batter. Cover it with the remaining reserved batter.
Dica: The extra cheese in the middle ensures a molten center filling.
Cook over low heat until the bottom of the cheese bread is golden brown.
Dica: Wait until the bottom is golden before flipping.
Flip the cheese bread carefully and wait for the other side to brown completely.
Remove from the skillet, slice, and serve immediately.
