Instructions
Weigh 1 kg of sour tapioca starch, setting aside 300g initially to handle the dough.
Dica: Use a digital scale to measure the starch precisely.
In a bowl, add the margarine (approximately 40g, equivalent to a rounded tablespoon), one tablespoon of salt, and three tablespoons of sugar.
Dica: Pour boiling water over the margarine to help it melt.
Pour 300 ml of boiling water over the dry ingredients (salt and sugar) and the margarine.
Dica: When adding the boiling water, mix well with a spoon until it is no longer easy to stir.
Add the egg to the mixture and mix slightly.
Dica: Ask for help mixing the dough after scalding the tapioca starch.
Transfer the dough to a clean counter and knead, adding more starch as needed until the dough reaches the ideal consistency, not sticking to your hands.
Dica: Dust the counter with tapioca starch to prevent the dough from sticking while kneading.
Shape the dough by making a long 'snake' and divide it into equal portions to form the rings (usually five portions).
Dica: The final shape is determined in this step, forming the individual rings.
Bake the rings in the preheated air fryer for 15 minutes at 170º Celsius.
Dica: Check for doneness after 10 minutes, as the recipe suggests they are perfect in 15 minutes.
